Why You Shouldn’t Weld Carbon and Stainless Steel Wire
Austenitic stainless steels such as grade 304 stainless or grade 316 stainless can be welded to plain carbon steel using MIG and TIG welding. When welding stainless steel to a dissimilar metal such as plain carbon steel, weld processes such as MIG welding that use filler material are preferred.
Which type of welding is best for 316L stainless steel
Depends on the thickness of the material, where the welding will take place( indoors or outdoors) and the nature of the part being welded. If you're welding thicker sections of 316L outdoors, SMAW would be effective; indoors, either SMAW or MIG.

That was the impression I got about the wire still requiring a shielding gas of some sort..Argon or CO2,but at least if you use gas anyway one of these is probably already handy so no requirement for another bottle(Tri-Mix).Although I've heard someone makes a wire that does not require the shielding gas.I've not located it yet.

Nfinch96, You might have some problems on that thin stainless, If your going to try to mig it I would like to suggest .023 wire. Remember that your welds need to be smooth so food does'nt get caught in the weld ripples which can hold bacteria.
